Physicochemical properties of gelatin:uhujhjn

Gelatin is polymer with high molecular & polypeptide partially hydrolyzed from collagen which is contained in animal shin and bone.

Appearance: white or light yellow,odorless,flavorless transparent or semitransparent solid slice or powder. Molecular weight: 10000-70000 ,the molecular of high grade gelatin is between 100-150 thousand. Amino acid structure of gelatin is very special: low in thiamine acid,but rich in glycin, alanine , proline and hydroxyproline.

Gelatin can not be dissolved in cold water,but it can intenerate by absorbing cold water with the weight of 5-10 times,it can be dissolved in hot water and form gelatin after being cooled,the difference between dissolving temperature and freezing temperature is very small.

Gelatin should be kept in dry, cool and airproof place . Avoid direct sunlight, high temperature.
