Quality: Anhydrous sodium pyrophosphate is white powder, or lumpy solid. Dissolves in water, easily soluble in acids, does not dissolve in mellow and ammonia. The aqueous solution assumes the alkali reaction. When it boils in the aqueous solution, it will hydrolyze into sodium hydrogen phosphate gradually. Can form into complex compound with alkali earth metal ion; Meets the Ag+ will form into white silver pyrophosphate. Sodium pyrophosphate decahydrate (Na₄P₂O₇•10H₂O) is colorless crystal of monoclinic system, with the specific gravity of 1.82, does not dissolve in alcohol, can form into complex with metallic ion. Easy to effloresce in dry air, when heat up into 100°C it will loss crystal water.

Usage: In industry: Used as the water softener, the additive of detergent, the boiler scale remover, the metallic ion chelating agent, it also can be used for producing synthetic rubber, adjusting the oil well slob. It is the raw material of galvanization, medicine, printing fine bleaching additive, yeast cheese manufacturing, solution and other pyrophosphate buffering agent. Also it's used in metal surface processing. In food industry: Used for improving PH value of meat and increasing the meat quality in the meat processing. Enhance the flour food's processing property for the wheaten food, and improve its quality. In the fruit industry can aspect, it can be used to avoid changing color after processing. Moreover, it also can be used as the egg cleaning fluid, the cheese emulsifier, the soy sauce and soybean milk additives and so on.
