Enzyme activity unit definition: The amount of thermo-stable ¦Á-amylase required to transform 1mg of soluble starch to dextrin, under 70¡æ, pH 6.0. The unit is u/ml or u/g.

II. Packing, storage and transportation
Plastic bucket, net weight 25kg/bucket.
Store in dry and cool place and prevent from rain and sunlight. It will retain its full activity for a period of up to 3 months at 25¡æ and 1 year at 5¡æ.
III. Applications and features
This product can be used in fermentation process of beer, MSG, glucose, alcohol, citric acid, lysine, lactic acid, glycerol, antibiotics, etc.
It has good thermal resistance and can rapidly liquefy starch under high temperature. It has small dosage, is easy to use and can improve the efficiency and filtration speed.

IV. Using methods
1.Beer industry
For each ton of ingredient, add 0.5-0.6L (20000u/ml), of enzyme. Quickly increase the temperature to 95¡æ or above. Hole the temperature at 100¡æ for about 30 minutes, untill liquefying completes.
2.Alcohol industry
After mixing ingredients with water, for each ton of ingredient add 0.5-0.6L (20000u/ml) of enzyme. Adjust the pH to about 6.0 only if it is higher than 6.0. Heat and hold the temperature at 100¡À5¡æ for 100 minutes. Saccharize after cooling.
3.MSG, maltose, glucose, etc.
Mix ingredients with water according to process requirements, adjust the pH, and add 0.6-1.0L (20000u/ml) of enzyme to each ton of ingredient. If use intermittent liquefaction, heat the tank rapidly to 100¡À50¡æ and hold for 30 minutes at 95-100¡æ. If use jet liquefaction, the jet nozzle temperature can be about 105¡æ and hol for 30 minutes at above 95¡æ till the viscosity meets the requirement.

V. Working principle and influencing factors
1. Working principle
This product is an endoenzyme that is able to hydrolyze the ¦Á-1.4 glycosidic bonds in starch, soluble dextrin and low-polysaccharides under high temperature. This enzyme is also able to quickly reduce viscosity of starch slurries to facilitate further handling and processing.
2. Effect of pH on enzyme activity and stability
Stable pH range 5.0-10.0, effective pH range 5.0-8.0, optimal pH range 5.8-7.0.
3. Effects of temperature on activity and stability
In jet liquefaction, this product is very stable under high temperature and the thermal stability of it is excellent. It is a good choice for intermittent or continuous liquefying processes, with an ideal working temperature of 96¡æ. (For steam jet application, temperature may increase to 100-105¡æ).
4. Calcium ion concentration
This enzyme has good stability with low calcium ion concentration. 50-70mg/kg is enough. So there is no need of adding ca++ when using tap water.
