ε-Polylysine is a natural
metabolic product
of microbes, and widely used as
antistaling agent
for food. It can inhibit
Gram-positive/negative bacteria such as
Escherichia coli,
Bacillus subtilis,
yeast,
lactic acid bacteria.
etc.
ε-Polylysine is light yellow powder with high moisture absorption and slight bitter taste. It also has good thermal stability (120°C, 20min) and can inhibit
thermophilic bacteria. It is soluble in water, slightly soluble in ethanol.
Use:
ε-Polylysine was approved in Oct. 2003 by the FDA as a safe antistaling agent of food. It is harmless to the human body, and will be automatically
depolymerized in into amino acids in the
intestinal tract. It can be used in rice, noodles, and cream, salad, cans and meat products.
