Polylysine

ε-Polylysine is a natural metabolic product of microbes, and widely used as antistaling agent for food. It can inhibit Gram-positive/negative bacteria such as Escherichia coli, Bacillus subtilis, yeast, lactic acid bacteria.
etc. ε-Polylysine is light yellow powder with high moisture absorption and slight bitter taste. It also has good thermal stability (120°C, 20min) and can inhibit thermophilic bacteria. It is soluble in water, slightly soluble in ethanol.
Use:
ε-Polylysine was approved in Oct. 2003 by the FDA as a safe antistaling agent of food. It is harmless to the human body, and will be automatically depolymerized in into amino acids in the intestinal tract.
